Here it is! Part one of the London England Top 10 through the eye of our youngest (5 year old). Do you have little kids traveling to London? Grab your cup of coffee, be inspired and get ready to smile as we reflect and remember their favorite destinations, tasty foods and see the holiday through their perspective.

  1. My Favorite Food in London was the Chips which we call French Fries. We ordered some yummy chips when we went to Windsor Castle. We even ate right across the street from the HUGE caste.

  2. Riding the “Triple” Decker Bus" which is actually a double decker bus was so cool. I got to sit on the top by the front window to watch the driver go. They get really close to the cars, trucks and people. I rode the 212 to catch the underground at Walthamstow Station

  3. I stayed at a castle called Woolley Grange while I was near Stonehenge. It was so cool and they had tons of stuff for kids. They even had to pools. That was my favorite part.

  4. After seeing the movie, Kid who would be King, I was really excited to see Stonehenge. My favorite part was listening to the cool recording as I saw the site. But guess what there is cool henge where you can still touch the huge rocks and maybe even talk to a wizard. That was really neat.

  5. London has the coolest armor with a whole building called the “white tower” for sword, armor and play at the the Tower of London. I followed along with Mission London to find different armor.

  6. Another castle that has really cool armor is Windsor Castle. It has really cool swords.

  7. Just a short walk from Paddington Station (I got to pick up a cool bear clock) is a fun park. I played forever on the ship at Hyde Park.

  8. You have to ride the cable car to see the O2 Center!

  9. They also have very cool boat tours down the Thames. They gave me a coloring book and crayons to play with on our trip.

  10. Did you know the cars drive on the other side of the street than we do.. Do you know why they do? It all goes back to the Medieval Time with Jousting. There is a really cool travel museum in London you should check out.

For the Chicken

  • 1 pound chicken

  • 1/2 cup Egg whites

  • 2 low carb tortillas

  • 1/2 cup parmesan cheese

  • Italian Spices

  • Salt and Pepper

  • 1 tsp. Nutritional Yeast

  • Coconut Oil Spray

  1. Into a blender, place two low-carb tortillas, 1/2 cup parmesan cheese, a sprinkle of salt and petter, a tsp. of nutritional yeast, a varsity of Italian Spices to your mix and blend into a meal.

  2. Dip chicken first into the egg whites and dredge through the tortillas mixture to coat on each side.

  3. Spray a large skillet with coconut oil and place over medium heat. Cover, and continue cooking 3-5 minutes, turn over over and cook for an additional 3-5 minutes or until chicken juices run clear. Cover with mango salsa and serve warm 

Ingredients

  • 1 cup mango cut into cubes

  • 1 cup strawberries cut into cubes

  • 1/2 cup blueberries

  • 1 can diced Rotel tomatoes, drained

  • 1/2 cup corn cooked or raw

  • 1 Tablespoon Lemon Juice

  • 1/4 cup feta cheese

  • cilantro chopped

  • 1/4 cup red onion chopped

Combine all above ingredients, mix and place onto of prepared chicken.  Feeling spicy, add a jalapeno or two.

Happy Mother’s Day to all the Mamas!  We hope your day is filled with love and fun with your family.  We are celebrating by headed out to Farm to Table Breakfast (and maybe a hike around the lake if the weather holds).  Thank you to my husband and our three babies for the the breakfast of yogurt and berries and loads of homemade gifts and cards.

Cookie Dough Dip

Coconut Squares (Made with Coconut Condensed Milk)

 

THM Strawberry Stuffed French Toast (E)

Ingredients

  • 4 tablespoons berry Triple Zero Yogurt 

    1. 1/3 cup egg whites

    2. 1/4 cup almond milk

    3. 4 tablespoons low carb tortilla crumbs or almond flour

    4. 1 tablespoon xilitol 

    5. 1 teaspoon cinnamon 

    6. 8 strawberries hulled and sliced

    7. 8 slices sprouted grain bread or low carb tortillas

Instructions

  1. In a shallow dish whisk the egg whites and almond milk together.

  2. In another shallow bowl, combine 2 tablespoons low carb tortillas or almond flour crumbs, 1/2 tablespoon xilitol and 1/2 teaspoon cinnamon.

  3. spray non-stick frying pan with coconut oil. To assemble the French Toast, spread a slice of bread with 1 tablespoon Triple Zero Yogurt. Top with two sliced strawberries and cover with a second slice of bread. Dip first in the egg white mixture and then with  crumbs. Fry over medium-high heat until golden brown.

  4. Continue the same way with the other slices of bread.

  5. Serve warm with additional strawberries.

Saturday: Breakfast for Dinner (E) Strawberry Pancakes with Strawberry Syrup (See Below)

Sunday: Easter Dinner (S) Baked Ham with Glaze and non starchy veggies

Strawberry Pancakes (E)

Ingredients

  • 2 cups old-fashioned rolled oats

  • 1 cup baking blend

  • 4 teaspoons aluminum-free baking powder

  • pinch of salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • 2 cups egg whites

  • 1 cup low-fat cottage cheese

  • 1 cup blended strawberries

  • almond milk or water, if needed, to thin the pancake batter

Instructions

Pour oats into the blender and mix until powered form.  Add the rest of the ingredients into the blender and blend well until a smooth texture.   Lightly coat a non stick griddle with coconut oil spray and set heat to low/low-medium heat.  Pour pancake size amounts onto the griddle and cook until brown. Flip and repeat.

Strawberry Syrup (FP):

Ingredients

  • 1 cup strawberries smashed

  • 1 cup blended strawberries

  • 1 cup water

  • 3 Tablespoons Xylitol

  • splash of vanilla extract

  • 1/4 tsp. of xanthan gum or glucomannan

  • pinch of salt

Instructions

Combine ingredients in a small saucepan except xanthan gum  Bring to a boil, then simmer.  While whisking, add xanthan gum.  Continue to simmer until sauce thickens.

Sugar Free Cinnamon Donuts * See Below!!

 

*Recipes*
Air Fried Brussel Sprouts
  • 1 Bag of Frozen Brussel Sprouts

  • 1 tsp xylitol

  • 1 tsp black strap molasses

  • salt and cayenne paper to taste

  • coconut spray

Line the Air-Fryer with foil.  Spray the Brussel Sprouts with coconut spray. Sprinkle salt and cayenne paper xylitol and molasses onto sprouts.  Mix and add to the air fryer. Cook for 15-18 mins until toasty.

Cinnamon Sugar Donuts (S)

INGREDIENTS

  • 2 c baking blend

  • 1 tsp. baking powder

  • ¼ c natural sweetener

  • 2 tsp cinnamon

  • ½ c greek yogurt

  • ¼ c nut milk (coconut or almond)

  • 1 egg

  • 2 T oil

Cinnamon “Sugar” Mixture

  • 1½ tsp cinnamon

  • 1 cup sugar

  • ¼ cup melted butter

INSTRUCTIONS

  1. Mix dry ingredients, sugar and cinnamon

  2. Mix in yogurt, milk, egg and oil

  3. Stir well

  4. Fill greased muffin pans ⅔ full

  5. Bake @375 for 15 minutes

  6. Remove immediately from pan and roll in melted butter

  7. Combine cinnamon & natural sugar (Sweet Blend)

  8. Roll donuts in cinnamon mixture

I can’t be the only Mama that struggles to find a menu that agrees with their children. After a particulary “fun” week of kids gagging and winning at the table (which is oh so lovely- insert eye roll), I told them they were in charge of picking out this weeks menu. So this morning I handed them each a cookbook and and them choose a dessert and two meals each. Here is this weeks menu designed by my children.! Easy as Pi?

Easy as Pi?! 🤷‍♀️

Do you ever look at what I do and think 🤔, it can’t be THAT easy? Well, your right! It’s not. But I’ll be real with you for a second and tell you what this business means to me. FB/INSTA it’s all a highlight reel. It’s not behind the scenes. I’m not chilling at the house or out and about eating pie all day. But what I am doing is real work. So how has the Rodan+Fields business model and my blogging grown me as a person? 

  • I am more positive! 

  • I am less stressed! 

  • I have more time with my kids.

  • I am able to travel and work on the go.

  • I do work when I want, where I want.

  • I do business on my terms.

Yes, I get no’s. Who doesn’t in every day life? But the yes’ far outweighed the no’s’. This is both applicable in writing as it is in Rodan+Fields. If I’m being honest, R+F has prepared me so well to rejection letters. It’s just one step close to a YES!! What a blessing!!

Yes, I do have to put time into my work both in writing and in business. But it’s time that I choose to work in the flexibly of my day. I am up at 4:45 to work, but that is my choice that I happily make!

Yes, I do put in money into my business. But it helps on taxes, pays for my skincare I receive a paycheck in that more then covers what I spend. The start up was low and what I put into my biz is far less then what I receive in return.

Yes, it’s taken me time to grow. This is NOT a get rich quick type job. But it’s so worth it! I have grown as a business lady, in confidence and in excitement. This biz is truly something and I invite you all to find out why! I won’t pressure you, we will see if it’s a right fit for you or not. If it is, wonderful. On this Friday, March 8th, we celebrate International Women’s Day 2019. The theme this year is #BalanceforBetter. Just how can we create a world that has a better balance for gender equality? Let’s start by celebrating women’s achievement. Who remembers the iconic song from Marry Poppins, “Sister Suffragette”? As a young girl watching the movie I didn’t fully appreciate the Lyrics . Now as a mother of two young girls, I see the incredible value in teaching our history to our young girls. Monday:Hillbilly Chicken with Air fried Brussel Sprouts (S) Similar to bacon wrapped chicken, this is a similar find with a creative yummy twist.

Tuesday: Enchilada Stuffed Spaghetti Squash Casserole (S) page 132 of the book Trim Healthy Table.

Wednesday: Chef Salad (E/S or FP) Pile the veggies on a bed of kale or spinach and enjoy. For protein consider boiling eggs, cutting up deli meat or adding some cheese.

Thursday: Trim Mac Salad (S) page 181 of the Trim Healthy Mama Cookbook

Friday: Low Carb Pizza, (c/o) crust made with Cheese bread sticks on page 310of the book Trim Healthy Table. 

Saturday: Shepards Pie! (S) We are prepping for St. Patrick’s day coming up in 1 week!

Sunday: Chicken Marsala- (S) from Bake at Midnite .  In order to make it fit Trim Healthy Mama guidelines, I am omitting the pasta and using baking blend with parmesan cheese as my breading.

Welcome to our oldest adventurous journey. Part three of the Big Island Top 10 is here. As told through the eye of our oldest girl (9 year old sweetie S). Do you have little kids traveling to Hawaii? Grab your cup of coffee, be inspired and get ready to smile as we reflect and remember their favorite destinations, tasty foods and see the holiday through her perspective.

  1. Pu’uhonua O Honaunau National Historical Park was my favorite place to visit. It was clear weather with a little rain when we went to the Captain Cook Site. It has a rich history filled with artifacts. I love learning about different religions. This place was very fun because all of the statues of Gods and Goddesses. I learned a lot. Did you know that Lono was the God of rain, peace, prosperity, agriculture, wisdom and learning. Also, Kapu was the sacred law of the culture. If you broke it you would be put to death unless you swam across the rocks to make into the Island of Refuge. There would be blessed by a priest and forgive.

  2. My other favorite food is Liloki Cheesecake. Liloki cheesecake has a creamy inside with whipped cream on top. It’s like eating a cloud with a sweet center. Coffee Shack in Captain Cook.

  3. In the same location as the Island of Refugee is a pretty Botanical Garden which also explains a lot of religions across the world and it included lots of beautiful flowers and statues.

  4. On our second day in Hawaii, I made a luau in the backyard. If you want to make your own luau, here is what you need: music, correct clothing (grass skirts and colorful outfits), tiki torches and palm branches, so you can dance with them. You also need a flower for your hair (we used hibiscus), you need to practice your dance moves and a tropical scenery for the stage.

  5. You know what was cool? I loved buggy boarding on the waves! You can get on top of the waves or even inside of them. Riding the waves is like flying. Go to the Hapuna Beach Park . AKA, The Wave Beach. I was also able to body surf without the board. When you body surf, it felt like you were flying over the wave. Sometimes when you are caught in the wave it feels like you are sucked into the wave. The weather was cloudy but warm.

    Steps for Boogie Boarding from my Travel Journal

    1. Take the boogie board to the ocean.

    2. Step to the water for a good wave.

    3. Climb onto the boogie board and rest against it.

    4. Lean the back of the board down then kick to catch the wave.

    5. Enjoy your wave.

  6. The weather was cloudy with a little sun on the Friday we had to leave Hawaii. Today we got to see the seahorses and even hold one. I sure liked holding the seahorses!! I learned that seaweed is grown with salt water. It is very good for you with all sorts of vitamins and minerals.

  7. The weather was slightly sprinkling and I walked into a cloud forest wichi is where it is very misty. The activity of this day was a coffee factory and shop in a cloud forest called Mountain Thunder Coffee Plantation. I loved walking through a cloud forest and the best food was a chocolate covered coffee bean. I learned that coffee started in Africa. Oh and while we were there I saw a wild board and a monarch butterfly.

  8. The weather was very, very hot and we went to an Octopus farm. I learned that octopus live to only 18 months old in captivity. The suction cups on an octopus are really sticky so don’t pull your hand away if it startles you. Otherwise you will harm it.

  9. The weather was hot and humid and we decided to go on a really long hike down a twisty mountain side. My mom, brother, sister, Dad and Grandpa hiked down to a black sand beach and vivid green meadow. I learned that bamboo could be found in Hawaii. We also bamboo sticks to hike back up the canyon. It was very beautiful.

  10. We had brunch at the Mona Kea for January Birthdays. The round dumplings were delicious and I learned that when whales mate they splash out of the water and whoever makes the best performance wins the female.

Light and Fluffy Quiche

Ingredients:

  • Optional Pie Crust

  • 1 cup Shredded Mexican Blended Cheese

  • 1 cup mozzarella Cheese

  • 1/2 cup Parmesan Cheese

  • 4 oz Cream Cheese

  • Green Onion

  • Handful of Kale

  • Cooked Sausage Bites

  • 4- slices Cooked and Bacon Crumbles

  • 8 Eggs

  • 1 cup Whipping Cream

  • 1 Tablespoon Italian Spice Blend

  • Salt and Pepper to taste

Directions:

  1. Layer the Pie Crust or Baking Dish with Cheese, Kale, Sausage, Cooked Bacon and onion.  

  2. In medium bowl, combine eggs, milk or cream, and then add salt, pepper and Italian Spice blend . Beat until smooth and pour over cheese and meat.

  3. Place prepared pie in preheat oven (375 degrees F)  If using a crust you may choose to cover with foil to protect it. 

  4. Bake in the preheated oven for 45 minutes, or until filling is set and crust is golden brown. Remove the foil, if used and continue to bake for 15 mins if the quiche is not set. 

Insta-Pot Pizza Chili
  • 2 pound ground turkey

  • 1 medium onion diced

  • 1 tsp butter

  • 2 cans RoTel Diced Tomatoes with Green Chilies

  • 2 cans of the following beans (Black, any kind of White & Kidney)

  • 1 – 2 Tablespoons chili powder (depending on how spicy you like your chili)

  • 1 Tablespoon cumin 

  • 1 Tablespoon Italian Seasoning

  • 1 tablespoon apple cider vinegar

  • 1 cup chicken stock

  • Himalayan salt and pepper to taste

  • 1 cup chicken stock low sodium

  • 3 ounce can of tomato paste.

  • 2 cans of sugar-free pizza sauce

Press Sauté button and add butter and onion and ground turkey. Once the onion and turkey has been cooked, turn off Sauté mood and add the rest of the ingredients. Close lid and pressure cook on chili at High Pressure for 30 minutes, followed by Natural Release. Open the lid carefully.

  1. One of my favorite foods in Hawaii was Snow Cones. We tried a few places for Snowcones and my favorite was Ululani’s Hawaiian Shaved Ice , just like my brother. It’s NEW downtown Kona! My favorite flavor is mango, passion fruit and coconut. I didn’t like ice cream inside.

  2. My other favorite food is Liloki Cheesecake. You have Got to stop by and try the best pie I have EVER had at the Coffee Shack in Captain Cook. Just wait until you see the view. WOW

  3. I got a new friend at Captain Cook’s landing (Puuhonau o Honaunau). Her name is Stingy the Stingray! Another friend for my stuff animal army!

  4. We were able to do our own hula! Here’s what you need: tiki torches, palm tree branches, hula costumes, music, a flower for your hair (we used hibiscus), and-that’s all.

  5. Seeing family was one of my favorite parts of Hawaii. I love to snuggle with my Nana and Papa and play with my cousins.

  6. Dolphins and eels up close are so cool to see. You can see both of them and walk through a waterfall at the Hilton Waikoloa VIllege. Plus you can even ride a train and a boat. My Nana and Papa attended their conference at this hotel.

  7. Volcano National Park has steam vents from a REAL volcano. It’s a huge crater and once I even got to walk through a lava tube. This time they were closed because of last year’s eruption. But, I did get to walk over a lava tube at the Paleaku Gardens and Mountain Thunder Coffee Plantation.

  8. You know what was cool? Surfing in the waves! I got to ride a real wave in the ocean! We tried a lot of beaches but my favorite was, the Hapuna Beach Park . AKA, The Wave Beach.

  9. My number one goal was to see the seahorse. Last time we came to the big island, it was my favorite moment. So on the very last day, this year, we took a trip to see the seahorses. Did you know you get to hold a seahorse. You have to make a coral with your fingers and stay very, very still. They will hold onto your fingers and it feels so magical. Guess, what?! This time we even wet to an Octopus farm. Which one is better for me? Well, the seahorses of course! But my Mom loved the octopus and you get to play a really LONG time with them. Make sure you listen to the directions, just ask my Mom.

  10. We almost missed our plane! No problem. We ran like a crazy bag of cats and caught our next ride. It was pretty funny-and fun.

Big Island Top 10 from our 5 Year Old

Here it is! Part one of the Big Island Top 10 through the eye of our youngest (5 year old). Do you have little kids traveling to Hawaii?   1. My Favorite Food in Hawaii was Snow Cones. We tried a few places of Snowcones and my favorite was Ululani’s Hawaiian Shaved Ice NEW in the heart of Kona!

  2. Riding the Waves and Swimming in the Pacific Ocean. We tried a lot of beaches but my favorite was, the Hapuna Beach Park.

  3. I went hiking with my Papa and my family. It was a long hike down a twisty, turny, bumpy road to Pololu Valley.

  4. Seeing the Octopus was really cool. I was nervous to touch it but my sisters did. But, I did play with the octopus and their water toys.

  5. I LOVED holding the seahorse and seeing the sea dragon. It was so cute. I had to make a coral reef with my hands and the seahorse’s tail held onto my fingers.

  6. We stopped by a chocolate farm and that was delicious. They gave us three different samples. But, you have to book ahead because we couldn’t go on the tour, they were full..

  7. We saw a volcano at Volcano National Park. But the lava tubes were closed. We did see some lava tubes at the Paleaku Gardens and Mountain Thunder Coffee Plantation. You just can’t walk through them.

  8. The Paleaku Gardens was pretty. We walked through a spiral maze to find the flag. I held the map!

  9. The Isle of Refuge was pretty cool. We heard from a Ranger and saw some statues and old huts.

  10. Most of all I loved playing cards and swimming with my cousins.
