Blueberry Kiwi Popsicles

August in North Carolina is scorching hot. With continuous toasty days, sugar-free icy sweet treats are a welcome relief . Middle L is our popsicles recipe engineer and came with this concoction after a trip to the local blueberry patch. With 9 pounds of blueberries we had plenty for muffins, 2 sets of popsicles, sugar-free carb friendly pie and plenty for snacking.

  • 2 cups blueberries

  • 1 kiwi juiced

  • 1 lemon juiced

  • 1 cup triple zero yogurt (we used vanilla)

  • 1 cup low -lat cottage cheese

  • 1 Tablespoon Greek Yogurt cream cheese

  • 1 tsp cinnamon

  • a dash of vanilla

Fill the blender with all of the above ingredients. Blend then place into molds and freeze overnight! Enjoy!
