This task coincides perfectly with our family activity today.

Bake a Holiday Treat and Give it Away to Friends or Neighbors

Grab your apron, baking hats and a favorite family recipe.  It’s time to create a delicious holiday treat. Last weekend our oldest came home with a gift for our family, a jar filled with dry goods and a recipe to create tasty cookies.  Today, we are going to create her yummy holiday treat, keep a few and give some away.

 Workout Challenge

13 minutes of running, biking or walking

Lace up your tennis shoes enjoy 13 minutes (or more) of exercise.

Day 12 Tasks:

Elf in Training 

1. Write a kind word or message on a notecard and leave them in a random location.

  • Personalize little messages to your family and place them around the house (on mirrors, in the refrigerator, in their lunch box or on their dinner plate)

  • Write positive notes and post them around the community (at the coffee house, in the post office, a local dinner or a community board).

2. Leave quarters in a laundry mat.

After dropping the kids off at school the morning, I slipped into the laundry mat and deposited quarters in the machines.

Record Yourself Singing a Favorite Christmas Song

As soon as the activity  was read this morning, my three started rehearsing their favorite Christmas songs. This evening, we will record their song and send them to a friend or family member. Locate a local charity to donate a gift.  It could be as simple as cans for a soup kitchen or donating a toy to Toys for Tots.  Local churches also have trees adorned with angels to support local children.  This year we choose to join hands with other families to give back to children in our town.

Looking for more inspiration, check out on of my favorite Christmas books: The 13th Gift  by Joanne Huist Smith.  This heartwarming story reveals how Random Acts of Kindness transformed the life of one family during the Christmas season inspiring them, in turn, to give back.  One of the reasons we incorporate Random Acts of Kindness into our holiday season, this book brings forth the importance of love and giving.

 2. Write a compliment to the server at a restaurant and tip extra.

Add a thank you, a smile or an compliment then add a couple dollars extra to your bill.

Check your local area for a fun outing with Jolly Old Saint Nick. Quite a few places are sold out but, there may be a cancellation or an event where your children can great Santa and his helpers.

Armed with coffee gift cards to our local coffee shop, Crossroads Coffee, each of the three elves took a treat to their teachers today. Their job was to sneak a treat!

Who doesn’t love to snuggle up with a good book and a mug of rich, milk chocolate?  Cold or hot, we will conclude our day reading, snuggling and enjoy a nice cup of chocolatey goodness.

1. Meet and Shake hands with someone new today!

An encouraging smile, a happy hello, shake someone's hand today and give them some holiday cheer. 

2. Give away an Ornament to a Friend or Stranger

This falls perfect in line with our family holiday activity.  I’ll have the kids make an extra ornament so they can keep one and give one away.

Make  a Christmas Ornament

For a simple, kid friendly activity, I came up with this adorable ornament.  To make your own repurposed crafty ornaments consider the following materials:

  • Wooden shapes (found at Target or Walmart less then .50 an item

  • Felt shaped ornaments either store bought or cut your own. I found mine at Hobby Lobby 50% off.

  • gems, buttons or holiday stickers

  • glitter

  • glue, fabric glue and hot glue

  • paint

Have children paint the wooden shape and embellish with glitter.  Decorate with buttons, gems or holiday stickers. Use the hot glue gun if the fabric glue or regular glue isn’t holding the ornaments.

 

Workout Challenge

6 Hanging Abs

Today we add a bit of core strength into our workout with hanging abs.  Using the pull up bar, we hold steady and bring knees to the chest for 1 rep, repeating 6 times. For more core exercises to try with a pull-up bar, check out this blog posting from Redefining Strength . Don’t have a pull-up bar for hanging abs, use two chairs with arm rests or Equalizer Bars.

1. Greet at least 5 people and say a kind word to them.

For kids:

  • Say hello to the teachers at school.

  • Greet your friends as they start their day.

  • Say something kind to your brother(s) or sister(s).

  • Say something nice to and about yourself.

  • Wave at the neighbors.

For Adults:

  • Pause in line at the grocery story and give the person ahead or behind you a smile.

  • At work give an greet your co-workers with a positive start.

  • Say something special to your spouse or significant other.

  • Be kind and extra loving to your kids, spend time with them.

  •  Be courteous to the car ahead or behind you.

2. Donate a Toy or Book you no Longer Need

The kids each picked out a couple toys or books to give to charity today.  Goodies will be dropped off this afternoon.

Read a Holiday Story

This year I grabbed the holiday books off the shelf and wrapped them in 25 bundles, one for each day before Christmas. This worked great until I came downstairs last night to a couple more then a few unwrapped by eager little kids, oops. A couple more days may pass until we get to unwrap again. LOL Do you have a favorite holiday or Christmas story you read every year?  I would sure love to hear it!

Get your strength on, today is pull-ups!  Need a little more then five pull-ups, try 5 sets of 5 pull ups throughout the day.  Struggling to get your pull-ups in, use a pull-up strap for support or equalizer bars to mimic the movement.

1. Put a fun surprise in a mailbox or at the front door. We are going to stuff an extra stocking we have with a few surprises for a sweet family in the neighborhood.

Make a Gift for Your Teacher

This craft took a few days to complete, however kids sure had fun finishing these unique gifts for their teachers today.  Glitter art is easy, fun and inexpensive however a bit time consuming.

Supplies Needed:

  • A Wooden Object or clipboard

  • Spray Paint (optional)

  • Clear Sealing Spray Paint (optional)

  • Glitter

  • Mod Podge

  • Paint Brush

  • Gems, Beads or Buttons

  • Glue Gun or Crafting Glue

Spray paint your wooden object (any color).  Paint the wooded object with Mod Podge and cover with glitter.  Let the object dry and dust off the extra glitter. Spray with the clear sealing spray to set the glitter.  Decorate with gems, beads or buttons.

 
Workout Challenge

Suspend your feet with a TRX Strap or on a couch.  Walk out to the pushup position, do one pushup then repeat 3 more times for a total of 4.

1. Tell what you Love about each of your family members

  • Use a cheerful card or notepad and write down what you love about each of your family members.

2.  Volunteer your time.

Here are some suggestions:

  • Volunteer to wish the dishes.

  • Volunteer to help with laundry.

  • Volunteer to help in the community.

For kids this could be as simple as helping around the house or asking to do something other then their regular chores. For adults, look up a local food bank, cook a meal for new parents, help put wreaths/flowers at a memorial or look for someone who needs help out and about.

It’s family movie night and what a better way to start the holiday season with a feel-good Christmas movie. With the weather chilly in Florida tonight, we are going to light a cozy fire, snuggle up with some blankets, pop some delicious popcorn and watch one of our favorite holiday family movies.  What’s one of your most treasured family Christmas movies?

Day 1 of our Adventure Series

December 1st has arrived and I’m bringing back our advent adventures. Just a week ago, I posted advent activities for the holiday season.   Here are the categories we chose: Family Holiday Activity and Workout Challenge. Introducing our newest challenge: Elf in Training Kindness Campaign!

 

Day 1 Tasks:

Family Holiday Activity

Write a Letter To Santa

There are numerous websites advertising letters from Santa.  The one I like to use is the PNP (Portable North Pole) app. For the past several years I cultivated the magic of Christmas with a free, personalized video from Santa.  Last Christmas, I downloaded the free app that has both a parent and child corner.  This season I decided, to pay a little extra to make three unique videos on for each child.  Each one is about 5 mins long, creative and enchanting. It was worth it to see my three excited and beaming as Santa send hello to them, took them on a tour a different parts of the North Pole and demonstrated how each were on the nice list.  In all three videos I was able to provide their names, upload photos and pick out a task each had diligently worked on this year.  The videos are unique, creative and personal all together making for a magical experience.

This afternoon, when the kids return from school, we are going to each write a letter to Santa, (my husband and I included). In their message, I ask that they cover the following details:

  • The Date

  • Greeting to Santa

  • A kind word about Santa and his mission

  • Something for which they are thankful

  • One or more question(s) about the North Pole

  • Closing

This weeks menu is ready! We follow the guidelines of Trim Healthy Mama developed by Pearl Barrett and Serene Allison and we encourage you to check out their websitebooks and various social media platforms. With Thanksgiving one week away, we decided to add a little fall fun to the menu. Time for some cranberries, turkey and stuffing!

Monday: Hubby Lovin' Chicken (S), Page 218 of the book, Trim Healthy Table This is Pearl Barrett and Serene Allison’s newest book and it is filled with yummy delicious wholesome recipes to try. This delightful chicken dish adds a unique blend of spices for a creative Monday meal.

Tuesday:  Taco Tuesday! (S or E) Add beans for some energy and pair with low fat cheese or take away the beans and add some yummy cheddar for satisfying! 

Wednesday:Loaded Sweet Potatoes (E). So delicious and so very easy to make

Thursday: Chicken Pot Pie (S) with leftover chicken and the crust made with Mozzarella Bread 

Friday: Carb Friendly Pizza & Movie Night (S)

Saturday: Pumpkin Pie Soup (S) An old favorite, this is one of our favorite fall soups!

Sunday: Black Bean Chili (E) ! Who doesn't love chili on a chilly fall evening?  This is a new recipe we are trying from Joy Filled Eats!

For my Sweet Tooth

For snacks, I have a lot of tasty desserts listed and I hope I have the time for them all! From pumpkin custard and brownies, to low carb truffles and Sopapilla Cheesecake,  I defiantly had a sweet tooth while designing this menu.  Thank goodness for Trim Healthy Mama’s sugar-free lifestyle!  I have my desserts and enjoy them, too!

Pumpkin Pie Soup (E)
  • 1 sautéed onion

  • 4 large sweet potatoes cooked

  • 4 cups chicken or vegetable broth

  • 1 cup pumpkin

  • 1 can of white navy beans

  • 1 bag of riced cauliflower

  • 1 tsp sea salt

  • Pumpkin pie spice to taste (I used closed to 1/2 Tablespoon)

  • Dash of cayenne

  • Cinnamon to taste

  • Dash of paprika

Directions:

To cook my sweet potatoes, I wrap in foil, place in the Instapot for 12 mins on manual pressure with a natural release. Let them cool then blend in the rest of the ingredients in the mixer. Place back into the Instapot and set on soup for 30 mins. Top with pumpkin seeds.

New Crust Creation:

  • 2 cups mozzarella cheese

  • 1 tablespoon cream cheese

  • 1 egg

  • 1/2 cup baking blend

  • 1/4 cup psyllium husk

  • 1/4 cup nutritional yeast

  • 1/2 cup Parmesan cheese

  • 1 tablespoon Italian seasoning.

Place the both the mozzarella and cream cheese into the microwave for a 1 minuet and 1/2. Add the remaining ingredients and mix well.  If the dough is to soft, add more parmesan cheese or baking blend until easy to roll out. Place the dough between to pieces of parchment paper. I prefer to use a fondant roller to stretch the crust or you can use a rolling pin. Cook at 400 degrees for 10 mins until browned.  Place desired toppings on crust and cook for an additional 10 minuets or until the cheese is browned.

Cranberry Chia Preserves is a recipe I created a couple years ago adapted from a Facebook post. This recipe is delicious, so very easy and done is less than 15 minutes!! Tart but sweet, this fall recipe can be used on top of bread, turkey or just a spoon full of yum.

  • 1 (12 oz.) bag of fresh cranberries

  • 2TBSP chia seeds

  • 1 cup water

  • 1/2 cup xylitol

  • 1 TBSP Braggs Apple Cider Vinegar

  • 1 teaspoon almond extract (optional)

  • orange zest or 1 drop of orange essential oil, (optional)

  • a dash of crushed red pepper (optional)

Bring all ingredients to boil, simmer for 10-12 minutes. Store in mason jars. This recipe made approx. 1 1/2 pints. Refrigerate.

Feeling Creative try some of these other additions to the preserves:

  • A cup of frozen raspberries

  • A cup of frozen strawberries

  • A cup of frozen rhubarb

Stories from My Youth

 

Time to Nickel and Dime

Visiting my Greatest Generation Grandparents was always a treat. We were blessed to live only a few hours away from my Dad's parents and they played an impressionable role often coming to visit and treating us to weeks at Grandparents "Camp". So many childhood moments were spent visiting, learning and being enriched with midwestern values.  These experiences and their personal stories created a framework for who I am today I hope to share some of their amazing traditions.  

This past week, after our electric bill showed up, one such memory popped into our heads. My older sister and I recall Grandpa handing us a roll of nickels one visit.  The roll of coins was ours by the end of the stay, if we remembered to turn off the lights as we left the room.  If we were caught leaving the room with the lights still on, however, we would owe Grandpa a nickel. If memory serves me right, my sister had an almost full roll where as was a few cents short by the end of the week (Oops, LOL). This particular memory made in impact on me that to this day I can't leave a room or my house without all the lights being turned off.  So imagine my anxiety when all of a sudden my own children were leaving lights on all over the house. All I could envision is how much money I would have owed my Grandparents.  So, my husband and I figured why not give it a try?  Which child of mine is going to have a whole roll of nickels by the end of the week and which will be short a few cents?  Sorry babies, its time to Nickel and Dime ya' Great Grandpa style.

  • Haunted Halloween Tea with Eye balls (deviled eggs) and Grizzly Gorp (Cheese and Wasa crackers) S

Insta-Pot Pizza Chili
  • 2 pound ground turkey

  • 1 medium onion diced

  • 1 tsp butter

  • 2 cans RoTel Diced Tomatoes with Green Chilies

  • 2 cans of the following beans (Black, any kind of White & Kidney)

  • 1 – 2 Tablespoons chili powder (depending on how spicy you like your chili)

  • 1 Tablespoon cumin 

  • 1 Tablespoon Italian Seasoning

  • 1 tablespoon apple cider vinegar

  • 1 cup chicken stock

  • Himalayan salt and pepper to taste

  • 1 cup chicken stock low sodium

  • 3 ounce can of tomato paste.

  • 2 cans of sugar-free pizza sauce

Press Sauté button and add butter and onion and ground turkey. Once the onion and turkey has been cooked, turn off Sauté mood and add the rest of the ingredients. Close lid and pressure cook on chili at High Pressure for 30 minutes, followed by Natural Release. Open the lid carefully.

New Crust Creation:

  • 2 cups mozzarella cheese

  • 1 tablespoon cream cheese

  • 1 egg

  • 1/2 cup baking blend

  • 1/4 cup psyllium husk

  • 1/4 cup nutritional yeast

  • 1/2 cup Parmesan cheese

  • 1 tablespoon Italian seasoning.

Place the both the mozzarella and cream cheese into the microwave for a 1 minuet and 1/2. Add the remaining ingredients and mix well.  If the dough is to soft, add more parmesan cheese or baking blend until easy to roll out. Place the dough between to pieces of parchment paper. I prefer to use a fondant roller to stretch the crust or you can use a rolling pin. Cook at 400 degrees for 10 mins until browned.  Place desired toppings on crust and cook for an additional 10 minuets or until the cheese is browned.

Cherry Crisp (E)- Reading through this blog post, I didn't realize cherries had so many health benefits.  Even if you don't create this tasty treat, I encourage you to click the link to read. 

Pumpkin Oatmeal Cookies

Ingredients

  • 2 cup Instant Oats

  • 1 cup THM Baking Blend

  • 1/2 Cup Sprouted Rye or Spelt flour

  • 2 tsp Baking Powder

  • 1 tsp Baking Soda

  • 2 tsp. Ground Cinnamon

  • Pinch of Sea Salt

  • 2 tbsp. Organic, Unsalted Butter, Melted

  • 1 Tablespoon Black Strap Molasses

  • 1 Tablespoon Honey (optional)

  • 4 Egg Whites (or 3/4 cup)

  • 1/4 cup pumpkin

  • 1 tsp Vanilla Extract

  • 1/2 cup Swerve

Other Optional Items to Add to your mix:

  • 1 cup Finely Diced Red Apple

  • 1 cup Raisons

  • 1 sugar-free chocolate chips

Directions:

  1. Mix together the dry ingredients: oats, baking blend, four, baking powder, baking soda, cinnamon and salt. Set aside.

  2. In a separate bowl, combine the melted butter, egg whites, molasses, pumpkin, honey and vanilla and swerve.

  3. Mix the wet and dry ingredients together, then add in any of the optional items.

  4. Preheat the oven to 325.

  5. Line a baking sheet with a silicone baking mat, scoop out a tablespoon for each cookie. Bake at 325 for 13-15 minutes then cool for 2-3 minutes before removing from the cookie sheet.

Pumpkin Mung Dal Curry (E)

Ingredients

  • 1 cup Mung Dal

  • 2 cups chicken stock

  • 1 cup pumpkin

  • 1 onion

  • 1 tsp cumin

  • dash of cayenne

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1st garam marsala powder

  • 2 tsp curry powder

  • 1 tsp turmeric

  • 1 cup almond milk

  • 1 tsp butter

  • 2 tomatoes chopped

Directions:

Set the Instapot on the saute mode. Add the 1 tsp. of butter and onion.  Cook onion until tender.  Add in spices (cayenne, cinnamon, nutmeg, marsala powder, curry & turmeric) cook for about 30 seconds to 1 minute. Turn off saute.  Add the remaining ingredients (Mung Dal, chicken stock, pumpkin, almond milk and chopped tomatoes).  Cook on manual for 10 mins.  Quick release pressure.

Tuesday:  Ranch Hand Taco Salad (E) page 200 of the book, Trim Healthy Table.  It’s Taco Tuesday in the house! The kids love there tacos and I'm so thankful Trim Healthy Mama has so many unique taco suggestions. 

Wednesday: Beans and Cornbread (E) page 111 of Trim Healthy Table. Ridiculously Easy and a quick serve it up the Energizing meal!

Thursday: Trim Train Italian Soup (E), Page 160  of the book, Trim Healthy Table.  Another Savory Soup for the chilly weather.

Friday: Carb Friendly Pizza & Movie Night (E).  It's Cauliflower Pizza Night!  

Saturday: Slimming Secret Spaghetti (FP) Page 102 in the book Trim Healthy Table. Who doesn't love spaghetti night?!  

Sunday: Creamy Bean, Bacon and Butternut Soup (E)- page 98 in Trim Healthy Table. Perfect end to an October evening.

A little food for thought. Halloween is fast approaching and our littles will be out parading their creative costumes and celebrating fall in style. But, what about all the littles with allergies?  As a teacher I had so many young ones with a variety of food allergies. Some broke out in hives others had sever responses that required a tag-a-long Epipen.  It really didn't hit home until our first born started having reactions to foods as early as 9 months. Now our sweet girl has to carry her Epipen and we, like many, have to read the back of packages for ingredients that might cause a reaction.

A couple years ago I was introduced to the Teal Pumpkin Project and ordered bracelets to help support and spread awareness.  Over the years the project has grown.  So when a friend of mine posted a picture of teal pumpkins at her local Target in Florida, I decided to make a trip of my own. We are thankful that our local Target not only Teal Pumpkin supplies but also an allergy free selection of goodies for our Trick or Treaters. See a teal pumpkin on the porch in your area?
